2. Ayam Taliwang (Grilled Chicken from Lombok)
Ayam Taliwang (Taliwang Chicken) is known as one of Lombok’s typical foods. And also, this is the most famous one. This one is unique because it usually uses a fresh and young chicken, so the texture is more soft and appetizing.
It can be served as fried chicken, spicy roasted chicken, and honey roasted chicken. Ayam Taliwang is always served with spicy sauce which contains red chili, garlic, onion, red tomatoes, Javanese sugar, fried shrimp, and salt.
From the appearance, this dish just looks like the other fried or grilled chicken we could find anywhere, but after you taste it, you can differentiate the ingredient used in chicken and sauce. Well, it’s totally different and tasty.
3. Plecing Kangkung
For vegetarian travelers, Lombok also serves a special food for you. Boiled Kangkung (kale) is usually accompanied with sprouts and peanut served with tomato sauce or ‘sambal terasi’ which is made of red chili, terasi (shrimp paste), salt, and tomato.
You can also drip it with small amount of lemon juice to make it taste better. If you are not a fan of spicy food, just ask the chef to separate the sauce. Therefore, you can still taste its unique taste but with little amount of spiciness.
